Zucker-Spezialitäten

Neben den Standard-Zuckerprodukten (Raffinade, Weißzucker und Flüssigzucker) bietet Nordzucker ein breites Sortiment an Zucker-Spezialitäten. Alle Zucker-Spezialitäten (zum Beispiel Puderzucker, Teezucker oder Hagelzucker) zeichnen sich durch einen besonderen Herstellungsprozess aus.

Icing sugar

Icing sugar

Nordzucker supplies two different grades for industrial purposes:
 1. Icing sugar, consisting of very finely ground pure refined sugar. A special conditioning method is used which significantly minimises clumping. 2. Icing sugar made of refined sugar but with the addition of starch as an anti-clumping agent. Because this additive consists purely of potato starch, this icing sugar contains no ingredients classified as allergenic.



Properties and advantages:

  • The small highly irregular crystals of icing sugar provide a very large surface area and therefore guarantee optimum solubility.

  • Icing sugar is also excellent for the decoration of pastries (such as Christmas stollen, biscuits or stirred cake).


Instant sugar

Instant sugar

Instant sugar is manufactured using a special spray drying process. Its extremely porous structure gives it very special properties.

Properties and advantages:

  • Instant sugar is compactable.

  • Instant sugar dissolves very quickly in cold liquids.

  • Instant sugar is an ideal carrier in powder mixtures (e.g. with aromas or cacao powder).

Nib sugar

Nib sugar

Nib sugar is made from EC grade I sugar (refined sugar). The refined sugar is moistened, pressed and dried. Breaking the agglomerates formed in this way gives this sugar speciality its characteristic shape.

Properties and advantages:

Nib sugar and icing sugar are both used for decorating pastries.

Brown sugar

Brown sugar

Brown sugar is produced using a special crystallisation method. The incorporation of caramel syrup added during the last crystallisation phase gives brown sugar its special colour and its unmistakable taste.



Properties and advantages:

Brown sugar is very good for pastry applications.

Soft sugar

Soft sugar

Soft sugar is made out of white sugar and cane sugar syrup. It has a very mild form of sweetness, an outstanding aroma (caramel/licorice), a very intense colour and a high moisture content.

Properties and advantages:

Soft sugar can be used for a wide range of applications (such as delicatessen products).

Candy sugar

Candy sugar

Candy sugar is made up of crystals with a size range of 3 to 30 mm. It is produced using a special crystallisation technique: white candy sugar is produced from extremely pure sugar solutions, whilst brown candy sugar is produced from a caramellised sugar solution. The crystals float freely in the sugar solution as they crystallise out. This forms very homogenous crystals when white candy is being produced, but irregularly shaped crystals when brown candy is being manufactured. This is due to the caramel additives which influence the crystallisation process. Candy is coarser than tea sugar but smaller than Kluntje candy. Other specialities such as crusty rock candy and granular rock candy are produced by crushing the candy crystals. The only difference between these types is the size of the crystals.

Properties and advantages:

The different types of candy sugar are suitable for all types of tea, grog, mulled wine and punch. Granular rock candy is also recommended for coffee specialities (such as Irish Coffee) and for enhancing desserts and sweet dishes.

Tea sugar

Tea sugar

Tea sugar consists of crystals in the 3 to 7 mm size range. They are produced by the slow crystallisation of pure sugar solutions. Nordzucker supplies white and brown tea sugar. The addition of caramel syrup and its incorporation in the crystals during the last crystallisation phase gives our brown tea sugar a strong colour and a very special taste.

Properties and advantages:

As you would expect, tea sugar is mainly used for sweetening tea, but is also very good for sweetening other hot drinks.
